Recipe of the Week
Our recipe of the week is recommended by Australian Diabetes Council dietitians as a good option not only for people with diabetes, but for all Australians interested in a healthy food option.
Broccoli tuna bean salad

Serves 4
ingredients
500g packet frozen Birds Eye Broccoli Florets
400g can Edgell Butter Beans, drained
10 cherry tomatoes
185g can John West Tuna in Springwater, drained
1/2 cup chopped fresh parsley
Freshly ground black pepper to taste
2 tablespoons prepared low fat Italian dressing
Instructions
1. Cook frozen Birds Eye Broccoli in boiling water for 3 minutes, drain then rinse in cold water. Drain again and allow to cool.
2. Place broccoli, drained Edgell Butter Beans, tomatoes, drained John West Tuna and parsley into a serving dish. Sprinkle with black pepper. Add dressing and gently toss the salad until well combined.
Recipe tip
Any of the John West flavoured tunas can be used for this recipe.
